I was making dinner tonight, sausages and mashed potatoes. While I was making the mash I remembered an email recipe from Chow that I had caught my eye... all I could recall was that it featured feta cheese and some kind of green with pasta. I had the idea that feta cheese and a green leaf vegetable might be a tasty way to liven up the mashed potatoes.
Mashed Potatoes with Feta Cheese and Rocket
Serves 4
Ingredients:
8 medium potatoes, peeled and quartered
100g feta cheese, cut into small chunks
2 tablespoons extra virigin olive oil
70g rocket
generous splash of milk
pepper
Method:
- Cover the potatoes in water and bring to the boil. Cook until soft.
- Drain the potatoes and put back in the pan. Add the feta cheese, olive oil, milk and pepper.
- Mash together thoroughly.
- Add the rocket and put the pan on the lid. Leave the lid on the pan like this for a couple of minutes to allow the rocket to wilt with the steam from the mash.
- Mix in the rocket and serve.
I have found the inspirational Chow recipe, it was "Beet Greens and Feta Pasta" . I think I will need to try out that recipe too...if my beetroot growing attempt is successful!
