Top Tip for Tasty Risotto

What can you do with the last bit of parmesan? The bit of rind left at the end that still has some cheese on it but is just too awkward to grate? Throw it in your risotto while it's cooking! My 11 year old son gave me this top tip after he had seen it on a tv cook show. It really does make your risotto extra tasty.
Tonight I made a hybrid of my two favourite risottos... it was a cross between Tomato and Spinach and Salmon risotto.....yummy!
