When I saw the recipe for Raspberry Blondies ("summery twist on chocolate brownies") on the Lakeland website I knew I wanted to try them out but raspberries are so expensive - it seems sacrilegious to do anything other than eat them as they are. Luckily the Co-op had a punnet for half price so I felt it wouldn't be so bad.
I didn't have a "tray bake" baking tray so instead I used a small square tin and a loaf tin lined with greased baking parchment. I was in a hurry while making these in the middle of the Sunday roast so instead of folding in the flour I just whizzed everything up in the food processor.
Despite not being as light and airy as they should have been, the result was still very satisfactory - the tart raspberries contrasting with the white chocolate very nicely. The kids loved them!
