Lorraine Pascale’s Flapjacks

The Boy wanted to make some flap jacks. We used the recipe from the BBC website by Lorraine Pascale.
Along with the usual flapjack ingredients (oats, sugar, golden syrup & butter) this recipe also incudes some ground ginger and lemon zest.  
This is an easy recipe, ideal for a child, although  it's probably advisable to supervise the part where the melted butter, sugar and syrup are combined.
As a finishing touch, I drizzled some melted cooking chocolate over the top.
These turned out really well. Initially, my son was not very keen on adding the ginger and lemon zest but the end result won him over. These two ingredients do add some extra depth of flavour.
We got a lot of mileage out of this batch of flapjacks - in packed lunches, as snacks and as desert!
I do prefer the flapjacks that have larger oat flakes, like jumbo oats. This recipe used porridge oats which are have been milled relatively finely and therefore created quite a dense flap-jack. Perhaps a combination of rolled oats and porridge oats would make the perfect flap jacke... something to try out next time!
