Simple Pleasures - Oven Roasted Ratatouille

Take a load of vegetables*, garlic and tomatoes, cut them into chunks, mix in lots of ripped basil leaves, coat with olive oil and crushed coriander seeds. Season generously and roast in the oven for 40 minutes. Add a splash of good quality balsamic vinegar and serve with chunky pasta sprinkle with crushed, roasted pecans and plenty of Parmesan. 
Utterly delicious and even better the next day. I must make this more often!

* I used onion, courgette, aubergine, red pepper, yellow pepper, fresh plum tomatoes & garlic.
