Anzac Biscuits

A lady on Ravelry mentioned Anzac biscuits ...I had never heard of them before. The biscuits feature coconut and oats as the key ingredients. It is said that in World War I the wives and mothers of serving Australian and New Zealand soldiers would make and send them these biscuits. 
When I found this recipe on the BBC Good Food website and read the glowing reviews, I decided to make some to take with me to the district sports event that my daughter is participating in today.
The recipe is very easy to prepare. I didn't have any porridge oats, just jumbo rolled oats. This doesn't seem to have had a negative effect on the finished product. I did struggle to get all the biscuits into a uniform size, but luckily this is a rustic looking biscuit so I don't think that really matters. When they first come out of the oven they are very fragile. I used a spatula to carefully lift them off the baking tray and slide them onto the cooling rack. Once the cookies have cooled a little and the butter has set, they become more robust...at first I was worried they were going to fall apart the minute you picked one up.
These biscuits are very nice! Chewy and crunchy at the same time. However, I think I would add a little less sugar the next time I make them.
