You can't beat homemade potato salad, in fact, I won't even eat the ready made stuff in plastic pots from supermarkets.
It's the perfect partner for cold meats, in particular ham & pulled pork...and especially with my Slow Cooked Gammon.
And it's so simple to make and cheap too; you can even use leftovers.
Potato Salad
Makes 2 large portions
300g of cooked and cooled new potatoes (I had new potatoes for dinner the night before and put some to one side to make this salad)
2 tbsp mayonnaise (I've used Hellman's light mayonnaise)
1/2 teaspoon of English mustard
1 teaspoon of fresh or dried chives
pinch of salt
pinch of white pepper
Method:
Mix the mustard, mayonnaise, salt, chives and pepper together in a large bowl.
Cut your cooked and cooled baby new potatoes into 2cm cubes. I like to leave the skins on as they are good for you. Place them in the bowl with the mayonnaise sauce.
Carefully mix the potatoes into the mayonnaise, using a kind of folding action to coat the potatoes - you don't want to be too rough as the cooked potatoes can start to disintegrate around the edges!
An ideal accompaniment for green salads, cold meats and barbecues.
Can be kept in a sealed container in the fridge for up to three days.
