Raspberry Jam Ice Cream

 My friend Donna gave me two jars of homemade jam. I already had two jars open in the fridge and another unopened jar in the cupboard. "What am I going to do with all this jam?" I thought to myself.
Then I started thinking that I should make some more ice-cream soon and it occurred to me that perhaps it would be possible to use jam to make ice cream. The key components of ice cream are fat, liquid, sugar and flavour. With the jam you have the flavour and sugar combined in one! Perhaps I would then just need cream and milk? A couple of Google searches proved my hunch was correct.
I simply mixed cream, milk and jam and poured it into the ice cream maker...40 minutes later I'd made some of the best ice-cream to date! The texture was very good, probably because of the nature of the sugar in the jam. I will definitely be trying this method out with other jam flavours... cherry? apricot?....I'll keep you posted!

How To Make Raspberry Jam Ice Cream
Makes 1 Litre

Ingredients
300ml double cream
200ml milk
250g / approx half a jar of good quality raspberry jam

Method
Mix all the ingredients together in a jug.
Following your ice cream machine instructions, pour in the mixture. 
When ready, decant into a clean, freezable tub and place in the freezer until needed.
