I used to have a little notebook into which I wrote down recipes including recipes which I had modified or improved on. I lost this little book a few years ago and have missed it greatly. It contained all my tried and tested favourites - one of which was a banana muffin recipe that I made so frequently that it should really have been imprinted on my memory.
I suppose this blog has now replaced that little book as a way of recording and documenting my cooking experiences.
For these banana muffins I used the recipe from the BBC Food website.
For once, I made no modifications to the core recipe, however, I didn't serve the muffins with slices of banana, honey, walnuts and creme fraiche.
The muffins turned out very well, in fact, I think my muffins look better and more appetising than those in the feature photo of the recipe!
In particular, I like the fact that, served without the "garnish" they are not too sweet. They are filling and tasty and unusually for homemade cakes, they taste better the next day.
The only thing I would change about this recipe is the banana content - I would like to make them more "bananary" so I'd add an extra banana next time.... and yes, there will definitely be a next time!
Unless of course I get side tracked by this Hairy Biker recipe for Lemon & Blueberry Muffins which looks delicious and has already been added to my "to cook list"!
