Beetroot & Feta Soda Bread Recipe

At the weekend I made Able & Cole's Celeriac & Blue Cheese Soda Bread. I really liked the fact that soda bread is so quick to make - no kneading or proving, you just mix it all together and put it in the oven. I also loved the addition of celeriac and cheese which makes the bread very savory. Paired with a bowl of soup, the fortified soda bread turns a snack into a meal.
On my Able & Cole recipe calendar there was the suggestion of using beetroot in place of celeriac, so I gave it a go. I used feta instead of Stilton and changed the ingredient quantities slightly to make up for the fact that beetroot is much "wetter" than celeriac.
I actually prefer my beetroot and feta version to the original... I'll definitely be making this again.



Beetroot & Feta Soda Bread Recipe
Serves 4


Ingredients:
200g self raising flour
150g grated beetroot
100g feta cheese, cut into small cubes
black pepper
100ml of milk
1 x large egg

Method:
  • Pre-heat the oven to 180°C / 356F / Gas Mark 4.
  • Grease and lightly flour a baking tray.
  • Mix the flour and grated beetroot together and season generously with freshly ground pepper.
  • Add the feta cheese.
  • Whisk together the egg and milk,
  • Stir into the flour and beetroot mixture until it forms a dough.
  • Gently shape into a circle and flatten slightly before placing on the baking tray.
  • Bake for 40 minutes or until golden and cooked through.
