Celeriac & Blue Cheese Soda Bread


I've got the Able & Cole 2013 wall calendar. Each month has a different recipe. February's recipe is "Celeriac & Blue Cheese Soda Bread". I made it today for lunch, to go with my "Braised Celery & Yellow Pea Soup".
Usually soda bread is quite dry, but the addition of the grated celeriac makes it very moist, maybe just a little bit too moist; next time I'd reduce the amount of celeriac slightly. I did think of reducing the milk/yogurt combination but it's already quite a dry mixture to form into a dough so it seems the moisture is being released by the celeriac as it's cooking.
Overall, it's a pretty easy recipe that results in a small but tasty savoury loaf, ideal served with soup.
As an alternative, you could also use grated beetroot. I think I'll have a go at that one day soon since my daughter has really developed a love of beetroot lately.
