Stuffed Dates with Cream Cheese & Almonds


This has got to be one of my favourite, quick and easy, if somewhat indulgent snacks to make.
Simply get some large pitted dates (medjool), slice open lengthwise and put in a teaspoon of soft cheese, such as goats cheese (or even Philidelphia, although the flavour is not so good). Top with some almond flakes that have been gently toasted in a dry frying pan. Not the word "gently"...the will burn very quickly!
My kids love these and I can imagine they'd be great served as a snack if you have friends around.
