Courgette & Halloumi Soda Bread
Ingredients:
200g self raising flour
1 courgette (approx 150g) grated
175g halloumi, chopped into 1cm cubes
freshly groud pepper
100ml milk
1 large egg
Method:
- Pre-heat the oven to 180°C / 356F / Gas Mark 4
- Mix the grated courgette, flour, cheese and pepper together in a large bowl.
- Whisk together the egg & milk and carefully fold into the flour mixture.
- Form into a rough, round ball and place on a floured baking sheet.
- Bake in the oven for 40 minutes until cooked through.
- Allow to cool for about 10 minutes before serving.
- Great with soups or as a side dish to a meal.
