Courgette & Halloumi Soda Bread

Ingredients:
200g self raising flour
1 courgette (approx 150g) grated
175g halloumi, chopped into 1cm cubes
freshly groud pepper
100ml milk
1 large egg

Method:

  • Pre-heat the oven to 180°C / 356F / Gas Mark 4
  • Mix the grated courgette, flour, cheese and pepper together in a large bowl.
  • Whisk together the egg & milk and carefully fold into the flour mixture.
  • Form into a rough, round ball and place on a floured baking sheet.
  • Bake in the oven for 40 minutes until cooked through.
  • Allow to cool for about 10 minutes before serving.
  • Great with soups or as a side dish to a meal.
