My Philips HR2305/HR23054 Ice Cream maker came with a recipe book. From this book I have made the "Basic Ice Cream Recipe" many times. As is usual for me, I tend to adapt recipes, sometimes because of the ingredients available and sometimes because I like to make things that are a little bit healthier.
In this case, I didn't have vanilla sugar, only a good quality vanilla extract and I prefer semi-skimmed to full fat milk, so here is the recipe with my revisions that really don't detract from making a delicious and creamy ice-cream.
Basic Vanilla Ice Cream (for an ice cream machine)
Makes 1L
Ingredients
3 large egg yolks*
100g (4oz) caster sugar
1 tsp vanilla extract
250ml (8.3fl.oz) semi skimmed milk
200ml (6.6fl.oz) double cream (whipped until almost stiff)
Method
- Beat together the egg yolks, sugar and vanilla extract.
- Add the milk gradually, stirring constantly.
- Mix in the cream and beat everything together thoroughly.
- Switch on the ice cream maker and pour in the mixture slowly.
- Run the machine for 40-50 minutes.
- After this time you will have a soft serve ice cream which you can use right away.
- If you prefer a firmer ice-cream, decant into a freezable container, with a lid (I used cleaned out icecream tubs) and place in the freezer for at least 2 hours.
- Can be stored in the freezer for up to 2 months.
My model of Ice Cream maker is no longer available, however, the Andrew James Ice Cream Machine is almost identical and has excellent reviews on Amazon.
*Please note, this recipe contains raw eggs. ReplyDeleteThe ice cream rolls are made by properly pouring a base of sugary milk on a very cold steel surface. Metal scrapers are then exerted to chop ice cream toppings in the base and suitably scrape it around to make air. When the base is solid and frozen, it is spread very finely and crawled at a specific angle to make the stunning ice rolls.
