Melon, Lime and Cucumber Cooler

This is my version of Able & Cole's "Cool Cucumber and Melon Cooler" - I made mine with extra lime and mint because I love lime and mint! I also used a little more honey for some extra sweetness...but still, it's not overly sweet and it's VERY refreshing. If you prefer an alcoholic version you could add a shot of vodka, gin or even Midori....Midori....it's been a long time....reminds me of Cornwall and my friend Tracy....it was her favourite tipple
Anyway, back to the recipe....


Melon, Lime and Cucumber Cooler
Serves 2

Ingredients:
1/2 Ripe Galia Melon - seeded, peeled and cubed
1/2 Cucumber - peeled and cubed
Juice of 2 limes
1 tablespoon honey
Generous spring of mint
Sparkling mineral water
Ice cubes

Method:
1. Put the melon, cucumber, lime juice and honey in a food processor. Add a couple of mint leaves. Whizz to a fine pulp.
2. Push the pulp through a sieve with the back of a spoon.
3. Add more honey or lime juice to your sieved puree, depending on your preference.
4. Place some ice cubes in a glass and fill 3/4 with the melon/cucumber puree.
5. Top up the glass with sparkling water and add a sprig of mint.
6. Enjoy!
