Breakfast Hash

Today it's the Prudential Ride London. We live within the bike ride route which means the roads are closed and most people don't bother going out in their cars because you are more or less hemmed in. Many people complain about the inconvenience but I really love this brief respite from the relentless traffic. It's so quiet and gives the neighbourhood a nice atmosphere. 
Last night we didn't have a proper dinner so I was dreaming of a really tasty and hearty breakfast. I also thought I must do something with the left over boiled potatoes and streaky bacon in the fridge. The obvious solution was a hash which has the added bonus of being quick and easy to prepare.
So, this morning panned out pretty well - a tasty breakfast with coffee followed by watching the Federer V Lopez game which we'd recorded as it was on at 1am UK time. That's what I call a perfect Sunday morning :-)
Potato & Bacon Hash Recipe
Serves 2

Ingredients
1 tbsp light olive oil
knob of butter
5 potatoes, boiled and cooled (left overs work brilliantly), cut into quarters and then sliced
1 onion, finely chopped
4 rashers of streaky bacon, cut into 0.5cm strips
1 clove of garlic, chopped finely
freshly ground pepper
generous amount of fresh parsley, chopped

To serve
Egg, poached (optional)

Method

  • In a large frying pan, melt the butter and oil.
  • Fry the onion and bacon bits until the onion is soft the bacon bits starts to brown.
  • Add the garlic and potatoes and fry for about 5 minutes, moving the ingredients around the pan regularly, but not too much as you risk breaking up the potatoes too much. Fry until the potatoes start to go brown and crispy. 
  • Stir through some freshly ground black pepper and some chopped parsley.
  • Top with a poached egg.


This is another cheap dish that's also very versatile. You could use all kinds of left over vegetables or replace the bacon with chorizo or ham even. Or how about some fresh chopped chillies to add a bit of spice?
