Simple Flageolet Bean Salad

This is a great salad to serve alongside meat and fish. It's quick and easy and the tasty flageolet beans add fibre, protein and help to satisfy hungry people. Brilliant if you have a family of teenagers that are always eating! Seems to keep them full for a bit longer :-)

Simple Flageolet Bean Salad
Serves 4

Ingredients:
Bag of baby salad leaves
1 raw beetroot, julienned
400g tin of flageolet beans, drained
1/2 cucumber, sliced
For the dressing:
2 tablespoons of extra virgin olive oil
1 tablespoon cider vinegar
1/2 teaspoon dijon mustard
freshly gound black pepper

Method:
Place the salad leaves, drained beans, beetroot & cucumber in a large bowl.
In a small jug or cup, whisk together the olive oil, cidre vinegar, mustard and pepper.
Pour over the salad and toss well.
