This is my third day off work, at home looking after my sick son.
This is a recipe card he picked out one time we were shopping at Tesco's so I thought I'd make it for his lunch today.
I had not used cornmeal or buttermilk before in cooking and was a little concerned that these muffins could turn out heavy and dry like my scones do!
The directions were pretty easy to follow although the instructions about what to do with the cheese were a little confusing. Basically you need some grated cheese for putting on the top of the wet muffin mix before baking and then some slices of cheese to put inside the muffins when they are done. The 1tbsp of grated cheese that they suggest for topping the muffins is not sufficient. You probably need to grate about 1/4 of your cheese for topping and then use the rest for the filling.
I don't have a 12 hole muffin tin, but I do have 2 6 hole tins....one isn't non-stick, I greased it with the butter and there was no problem getting the baked muffins out.
While they were baking I was watching them excitedly as they were rising and the cheese turning golden and dared to think that they might actually turn out alright...well, they did turn out alright, in fact they turned out great! The muffins are light and tasty! The cheese, tomato chutney and rocket leaves are a nice combination.
I wonder what other fillings would compliment these muffins?
I also wonder what they are like later, when they are cold. Are they any good the next day or do they go stale quickly?
My son enjoyed them too... the only problem is I have a lot left over...anbody want one?
