Here is the recipe I used for the delicious scones I made yesterday:
Scones
Makes approx 8
Ingredients:
250g Self raising flour
pinch of salt
50g margarine or very soft butter
25g caster sugar
1 large egg
water
You will also need:
Baking tray
6cm cookie cutter

- Pre-heat oven to 220°C / 425 / Gas Mark 7.
- Grease and lightly flour a baking tray.
- Put the flour salt & margarine/butter into a food processor or mixer and whizz until blended. Or you can rub in by hand if you don't have a mixer.
- In a measuring jug, crack the egg and add milk to make up to 1/4 pint (150ml). Beat the egg and the milk together well.
- Add the milk/egg mix to the flour, keeping a little back to brush the tops of the scones with. Mix in.
- Remove the scone dough from the mixer and knead gently on a clean, lightly floured surface.
- Handly very lightly to keep the dough airy.
- Roll the dough out to just over 1/2 inch thick and cut into 6cm circles (I just use a round cookie cutter).
- Gather together trimming and knead gently together and then roll out again and cut more 6cm rounds... continue until you have used all the dough.
- Place scones on your greased/floured baking tray and brush the tops with the reserved egg/milk mix.
- Bake for about 10 minutes.
- Allow to cool for about 5-10 minutes and serve fresh with strawberry jam, cream (Cornish clotted cream is best but you can also use thick whipped double cream) and a pot of tea. Heaven!
