Bean Salad

What can you serve with a margharita pizza to add some protein and fibre?
A bean salad!
Sorry about the photos...for some reason they are coming out with a vintage 1970s cook book look!




Bean Salad

Serves 4



Ingredients:

1 x carrot, grated

2 x tomatoes, cubed

2 x sticks of celery, sliced

1/4 of a cucumber, cut into small chunks

1/4 of a small onion, finely chopped

large handful of red cabbage, finely sliced

1 x 410g tin of mixed beans, drained

1 tablespoon capers





For the dressing:

2 tablespoons extra virgin olive oil

2 tablespoond cider vinegar

1/2 teaspoon English mustard

freshly ground black pepper



Directions:

Put all the salad ingedients together into a large bowl.

In a separate bowl or small jug, mix together the ingredients for the dressing.

Pour the dressing over the salad and toss.

Serve right away.
