The Good Cook - Fried Cheese & Ham Sandwiches

Fried sandwiches? Sounds horrible..... but not if you make them in the Simon Hopkinson style!
This is another recipe from the BBC's "Good Cook" series that my daughter wanted to have a go at making.
I had visions of greasy fried bread, the kind you get in a cooked breakfast, the kind I don't like.
Although these sandwiches are not exactly low calorie, they are not greasy at all. The bread is just brushed with olive oil and we fried ours in a non-stick pan, so no extra oil was needed.
We did have a bit of a disaster whilst making these sandwiches - my food processor broke when we were grating the cheese. I had to use a hand held blender instead to mix the filling ingredients together which worked well but I was quite upset that my trusty Braun food processor that I have owned and used regularly for nearly 12 years is now dead.

So, what were the "Fried Cheese & Ham Sandwiches" like? Very nice! Crispy and tasty, as Simon says, "Deeply savory." It is a posh toasted sandwich. I don't think I could eat two rounds though - the recipe is to serve 2 people... I couldn't handle eating anymore than one as they are quite rich. We don't usually eat white bread so the kids enjoyed the novelty and I served ours with a green mixed salad to counterbalance the lack of fibre.

This is a nice, easy recipe. There is also plenty of sandwich filling left and this should keep in the fridge for about 3 weeks.
