I've had a pack of gnocchi sitting in the cupboard for a while, not knowing what to do with it. My daughter has eaten it a friend's house a few times so she is always nagging me about cooking it.
Today, due to the fact that I didn't have much of anything left in the fridge, I decided to use it.
I found some quite nice recipes on the web but this one in particular inspired me since it needed relatively few ingredients and I also have a large sage bush growing in my garden. It's very quick and surprisingly tasty.
Here is my version.
Gnocchi with Garlic & Sage Butter
Serves 2
1 x 500g pack of gnocchi di patate
2 x large knobs of butter
1 tablespoon olive oil
good bunch of sage leaves, chopped
2 x cloves of garlic, finely chopped or crushed
freshly ground black pepper
salt
a good quantity of freshly grated Parmesan cheese or Grana Padano
Method
- Bring a large pan of water to the boi.
- Melt the butter in a small frying pan.
- Gently fry the garlic and sage in the butter. Season with pepper.
- Add a pinch of salt to the large pan of boiling water and add the gnocci. The gnocchi cooks very quickly, in about 2 minutes usually. You can tell when it's cooked because it floats to the surface.
- Drain the gnocci and put it back in the pan.
- Coat the gnocchi with the garlic and sage butter and then drizzle with the olive oil.
- Serve immediatley, sprinkled with a generous amount of parmesan cheese.
