Chicken with Lemon Rice in the Slow Cooker

This weekend I tried out another recipe from the book Slow Cooker (Quick and Easy, Proven Recipes Series) .....

Lemon Chicken Rice
This is more of an Indian style Lemon Chicken with a hint of curry, rather than a Chinese style Lemon Chicken.
I didn't modify the recipe apart from taking the skin off the chicken as I wanted to reduce the fat content.
I was sure I had some curry powder in the cupboard but was a little shocked to discover it had  "best before" March 2006 stamped on the bottom...the graphics on the packaging are pretty old school too :-P ...I sniffed it and decided it would be fine... of course it was fine.
Logistically this turned out perfectly...I had to visit my elderly neighbour in hospital so this was cooking away while we were out.
I really loved this dish, although it wasn't particularly lemony... the rice was delicious, moist and very flavoursome. The chicken was beautifully cooked with just a hint of curry. The crunchy almonds and fresh coriander are a great addition and you shouldn't omit!
Disappointingly however, the kids were not that impressed.
I think I will have to make this when the kids are not around and I would make it more "lemony" by adding lemon zest to the main cooking phase and I think I would also add some chopped coriander near the end of the cooking time, as well as using it as a garnish.

Well, I have to say, this is another great recipe from the book:
