Pancakes a Day Late

Because I was karate training last night, I didn't have time to make pancakes for Shrove Tuesday... I promised the kids I'd make them tonight instead.
Normally I use the batter recipe from my ancient Bero recipe booklet but this time I decided to try Jamie Oliver's "One-Cup Pancakes" from the "Recipe Yearbook 2011/12" that my boyfriend kindly bought me as a surprise one day.
My son was mooching around in the kitchen while I was making dinner and declared that he would like the "Desert Apple Pancakes" version... I was looking forward to just having lemon and sugar but since his request involved ingredients I had readily available, I decided to acquiesce.
 One-Cup Pancake Recipe
Makes 6 pancakes

1 egg
1 cup of self raising flour
1 teaspoon baking powder
1 cup of milk 20g butter
tiny pinch of salt

Add all the ingredients into an electric mixer or food processor and mix!
Transfer into a jug and place in the fridge for about half an hour or until you need it. You can keep the batter covered in the fridge for several days.

While the batter is resting, cook the apple slices.

Apple Topping
2 x eating apples, cored and sliced
lemon juice
butter for frying
vanilla ice-cream
cinnamon

Toss the apple slices in a couple of table spoons of lemon juice to stop them turning brown.
Melt the butter in a frying pan.
Gently fry the apple slices, turning regularly, until they are soft.
Set to one side.

My son wanted small pancakes, just as they are shown in the magazine so I used my small omelette pan.

Making the pancakes:
Melt a knob of butter in a frying pan over a medium heat.
Ladle a dollop of batter into the pan and swirl around until the pan is evenly coated.
Fry until the edges start to crisp and the batter turns opaque.
Flip over and fry the other side.

Transfer the cooked pancake to a plate, place some apple slices on top, along with a scoop of ice-cream and a sprinkling of cinnamon powder.

The batter mix is stodgier than I would usually make so the pancakes turn out thicker but this is actually quite nice as they are more cake-like and a bit more filling than the big, thin pancakes. 
The combination of apple, vanilla and cinnamon is also pleasing.
 Not bad Jamie.
The kids loved it.
