Homemade Lemon Sorbet to Die For

 I've fancied making my own sorbet for a while... last weekend I actually got round to trying it out.
I used my trusty Philips icecream machine and a recipe from the small but marvellous book Ice Cream Made Easy: Homemade Recipes for Ice Cream Machines
Well, I never knew that sorbet contained egg whites! I am not one of these people that is fussy about eating raw eggs, especially when they come from my kitchen and I know how they have been stored and how old they are since the best before date is now conveniently stamped on every egg shell.
There are only four ingredients in lemon sorbet... lemons (of course!), sugar, water and egg whites.
This does take a little preparation - it's not a "throw it all in the machine" recipe. You have to make a syrupy infusion with the lemon zest first. But it is so worth it. I really do think this is the best lemon sorbet I have ever tasted.... I will definitely be trying out a few more of Annette Yates sorbet recipes.
