Melon & Lime Sorbet in an Ice Cream Machine

I loved the Lemon Sorbet I made in my ice-cream machine so I am going to work my way through some of the other sorbet recipes in Ice Cream Made Easy: Homemade Recipes for Ice Cream Machines
There are quite a few sorbet recipes in this book by Annette Yates: Tropical Fruit Sorbet, Raspberry Sorbet, Grapefruit and Gin (definitely going to make that one!!), Pineapple Sorbet, Apple & Mint Sorbet and Tea Sorbet (wonder if that's nice?)
Melons were on offer in Waitrose, 2 for £3 so that decided the next recipe to try out. I bought two Cantaloupe melons because they have beautiful orange flesh.
This recipe is very simple and only uses melons, lime juice and sugar. No extra liquid is required as melons have a naturally high water content.
I made 1 1/2 times the quantity in the recipe because one melon didn't give the required yield. The quantity I made fitted perfectly into my 1 litre re-used Carte D'or ice-cream tub.
This makes a lovely sorbet that would be a perfect refreshment on a hot summer's day. I did find the finished sorbet to very sweet, a bit too sweet for my taste. If I were to make this again I would try using less sugar and maybe some liquid glucose syrup to stop it going too hard in the freezer.
