My daughter picked out this recipe from my "River Cottage Veg" book and she also helped me to cook it.
Very quick and easy. I think she could almost make this unsupervised.
Served with some fresh bread it's an ideal mid-week super.
Refreshing and delicious.
So far I'm really loving Hugh Fearnely-Whittingstall's recipes from this collection.
And I've got lots more planned!
