When I was visiting my aunt in Norfolk she gave me a bottle of this "liquid fruit" made with guava (guayaba), a delicious fruit from Latin America.
Latin America produces many fantastic crops that are not widely available to the rest of the world. The aim of Cordon Verde is to introduce us to these exotic fruits and at the same time help generate sustainable farming income and education programmes for the farmers of Latin America and also to help them diversify from their main export of maize, coffee and cocoa. As you've probably heard through the Fair Trade campaigners, farmers don't always get the best prices for their crops so diversifying in this way and working through Cordon Verde can help to give them a more secure future.
I had the idea straight away to make sorbet out of this "liquid fruit" so I looked at some of the sorbet recipes in my book and came up with this:
Guayaba Sorbet
1 x 360 ml bottle of Cordon Verde Guyaba
360 ml water
1 cup of caster sugar
Dissolve the sugar in the water.
Mix in the liquid fruit.
Pour into your ice-cream machine as per the manufacturers instructions.
Place the sorbet in a tub and place in the freezer to set for a few hours.
Serve and enjoy!
The sorbet was perfect! The guava is so delicious and sweet with the texture of a soft pear. Very refreshing in this hot weather we've been having and of course it tasted even better knowing about the work that Cordon Verde do.
