Apple & Blackberry Eve's Pudding

Don't you sometimes get a bit bored at this time of year with the ubiquitous apple and blackberry crumble and pies? What other tasty and satisfying deserts can you make with Bramley apples and blackberries?
How about Eves Pudding? Simply put, it's cooked fruit with sponge cake on the top. Yummy, easy and makes a change from crumbles and pies.
Here's my recipe:

Apple & Blackberry Eve's Pudding
Serves 4

Ingredients:
2 x cooking apples, peeled, cored and finely slices
Juice of 1/2 a lemon - put this on the apple slices immediately to stop them turning brown
100 - 150g blackberries
3 tbsp water
40g sugar

Sponge topping:
100g butter
100g caster sugar
2 eggs
100g self raising flour


Method:

  • Pre-heat the oven to 180°C / 356F / Gas Mark 4.
  • Place the apple slices, lemon juice, blackberries, water & sugar in the bottom of a large oven proof dish.
  • Cream together the butter and sugar.
  • Beat in the eggs adding a little flour at a time.
  • Fold in the remaining flour.
  • Spoon dollops of the sponge mix over the fruit - don't worry too much if you can't cover every inch, as it bakes it will even out.
  • Bake in the oven for between 30-40 minutes, checking with a skewer that the apples and sponge is cooked.
  • Once cooked, allow to cool for 5 minutes and dust with icing sugar.
  • Serve warm with cream or custard.
