Mango Milkshake/Smoothie (Using Dried Mangoes)

My son read this off the side of the "Tropical Wholefoods" dried mango packet:
"you can also soak them in milk and yogurt for an hour and then blend for a real fruit shake".
Dried mangoes are one of my kids' favourite snacks and of course they love milkshakes so they were very keen to try this.

There wasn't a specific recipe on the packet, so I made up my own.

Mango Milkshake/Smoothie

Serves 4

100g dried mango soaked in 200ml of hot water

200ml Greek yogurt

700ml of milk

1 tablespoon of honey

handful of ice cubes

Put the soaked mangoes, including the liquid they were soaked in in the food processor along with 100ml of the milk.

Blend until very smooth.

Now add the honey, yogurt, milk and ice cubes.

Blend until well mixed and the ice is crushed.

Serve immediately.

You can adjust the yogurt and milk ratio to suit your own taste.

To me, this is more of a smoothie than a milk shake. It's quite filling and rich. The kids had it as desert after this evening's dinner.
I put the left over milkshake/smoothie into ice-lolly moulds and put them in the freezer for the kids to have the next day. I added a tablespoon of caster sugar to the mix before freezing to help prevent the lollies going rock hard.
I actually think they were nicer as lollies than as a milkshake. They got a definite thumbs up from the kids.
