I was wandering around Tescos at lunchtime wondering what on earth to make for dinner. I saw a Tesco's Finest Pork Filet (which I have never cooked before) and this recipe idea was on the back. I gave it a go.
Pork Fillet with Pancetta
- Make an incision along the top of the fillet (500-600g) and fill with small pieces of butter (I used homemade garlic butter).
- Sprinkle with lemon zest.
- Season with black pepper.
- Wrap in pancetta (used a 200g pack).
- Cook in the oven as instructed (35 minutes @ 190° C/374° F/Gas Mark 5)
- Allow to rest for 10 minutes before serving.
The pancetta keeps the pork moist and at the same time imparts a delcious flavour. I'll be making this again!
